Early Morning Butter
Crumb Coffee Cake
1 ½ cup flour
¼ cup melted butter
1/8 teaspoon salt
1 egg
2 teaspoon baking powder
2/3 cup milk
1/3 cup sugar
½ teaspoon almond (or vanilla)
Topping:
¼ cup sugar
1 teaspoon cinnamon
¼ cup butter – room temp
½ cup finely chopped walnuts
½ cup flour
Preheat
oven to 375. Whisk together flour, salt, baking
powder, and sugar. Beat melted butter, egg, milk &
vanilla. Add dry ingredients to wet and beat until
smooth. Pour into well greased 8” or 9” pan.
Topping:
Cream butter & sugar. With wooden spoon,
gently mix in flour, cinnamon, and nuts. Sprinkle
over batter. Bake 25-30 minutes.
Makes 9 servings.

Cinnamon Chip
Silver Dollar Pancakes

Serves: 6
2 cups Flour
2 tablespoons Brown sugar
2 teaspoons Baking powder
1 teaspoon Baking soda
1/2 teaspoon Salt
2 Eggs
1 cup Sour cream
1 1/2 cups Buttermilk
1/4 cup Melted butter
1 cup Cinnamon Chips (available from King Arthur 800-827-6836 or locally
from The Flour Barrel)
2 Bananas - one for batter & one for garnish
1 cup Finely chopped walnuts
Steps:
Whisk together flour, brown sugar, baking powder, baking soda & salt.
Mix in cinnamon chips and make a well in center of bowl.
Whisk together eggs, sour cream, buttermilk & melted butter. Add to dry
ingredients and stir gently with a wooden spoon just until ingredients
are mixed - don't over mix!
Gently stir in one thinly sliced banana and chopped walnuts.
Refrigerate for 60 minutes before frying in hot oil on a griddle or in a
frying pan. Drop using scoop that holds approximately 3-4 tablespoons
batter. (I use the large Pampered Chef scoop that holds 3 tablespoons
and make it heaping - the perfect size!)
Serve with whipped cream, banana slices, finely chopped pecans and
syrup.

Waffles
Note from the web designer: My mom's pancakes and
waffles are amazing! You really should try this recipe. Or better yet,
just stop by and ask her to whip you up some. That's what I always do.
½ cup
butter – melted
2 cups flour
1 tablespoon sugar
4 egg whites – beaten stiff
4 egg yolks
4 teaspoon baking powder
2 cups milk
1 teaspoon nutmeg
Stir sugar
& egg yolks into melted butter. Whisk flour, baking
powder, & nutmeg together. Alternately whisk dry
ingredients and milk into egg yolk mixture. Fold
stiffly beaten egg whites into mixture.
Bake in
Belgian waffller.
Orange
Waffles --- add 1 teaspoon orange extract
